I know that recently I REALLY enjoyed the backstage segment with Eddie & Batista after Eddie had backed out of a match due to stomach problems. Eddie was sitting on something with a take out container of Mexican food (They were in the Southwest). He was raving about being able to get some real food just like Mama used to make. Chile Rellenos, refritos, soft tacos, and some tortillas. Batista walked by and told Eddie that he was starving, and that Eddie shouldn't eat that because of his weak stomach. So Batista took the container and started eating the food. Eddie looked sad, and pulled out the tortillas. Batista popped back with "Oh man, that's just what I need to make this perfect," grabbed the tortillas, and left.
I don't know why, but that segment cracked me up. I think it was a perfect segment for the angle they were doing, and Eddie and Batista played it perfectly.

Hmm... off the top of my head, his post-match celebration from No Way Out 2004. Also, his few segments trying to get into the Playboy Mansion to stop the publishing of Chyna's naked pictures. That cracked my shit up.

Those were great segments, with the Bodyguards carrying him out the door. Truly some of the most entertaining segments of that year

This past Smackdown faking the chair shot ruled. I've always loved that spot, especially when he would get caught and try begging the referee to not DQ him.

I just watched that match. It was incredibly entertaining for a match that was basically just for storyline purposes. And it looked like they were setting up for a Guerrero-Kennedy feud

RAW just reminded me of those awesome Lie, Cheat, and Steal vignettes with Chavo and Eddie. Awesome...
Another I just remembered was Backlash (or leading up to Backlash) 2000 where Eddie had to go to his graduation for night school and defend the European title against Essa Rios that same night, and he comes for the match still in his tuxedo.

I remember the RAW that Eddie was at the bar with Austin when they were about to get their program going until Austin walked out of the company. GOD I wanted to see that feud BAD at that point......

I vividly still remember Eddie on Nitro, on which I believe was Chris Benoit's debut on WCW, or shortly after. Shit, it could've been Eddie's debut instead, I don't remember that. Just the match.
That had one of the most vicious powerbombs I've ever seen. The fuckin snap that was on that thing was unbelievable.

That one is probably the best, to me. Watching that brief little bit of it last night brought back a lot of memories.

Eddie doing Karaoke that night was beautiful.
I think my favorite moment with him is when he "quit" WCW on Nitro. (Led to the LWO angle) His promo that night was just so believable, and really one of the first times we heard him talk much.
